Originating in the southern Italian region of Calabria, the Fabbris Calabrese salami is made from coarsely ground pork combined with sweet paprika and chilli then cured for 21 days. This combination results in a robust, fiery salami great atop a pizza or grazing platter.

Our uniquely lean Hungarian Salami is made from finely minced pork meat, seasoned by hand then cured and fermented for up to 21 days. The result is a mildly flavoured salami ideal in a sandwich or rolled on a charcuterie board.

Our Pancetta Schiacciatella is made using both the pork loin and belly rolled and pressed together for a unique oval shape. Hand-salted and rubbed with spices and cracked pepper, it is air-dried for 90-120 days. Our Capocollo Loin (also known as ‘lonza’) is made solely from pork loin. Hand-prepared in a similar process to prosciutto but with less maturing time due to its smaller size (90-100 days), this sweet-tasting, lean cut is great on a pizza or antipasto platter.

Hand-made using the pork loin, our premium, lean and delicate Deluxe Ham is trimmed of any fat, lightly cured and smoked to perfection. Its smaller size makes it ideal to tuck into crackers and cheese or in a sandwich for lunch.

Our Prosciutto is hand-salted before being air-dried in stages for 6-8 months. We assess the product daily to ensure the flavours have infused. Each piece is then individually selected to ensure premium maturity. This process results in a flavourful and luscious prosciutto that simply melts in your mouth. Serve in a fresh panino or on a charcuterie board.
