Our Capocollo Loin (also known as ‘lonza’) is made solely from pork loin. Hand-prepared in a similar process to prosciutto but with less maturing time due to its smaller size (90-100 days), this sweet-tasting, lean cut is great on a pizza or antipasto platter.
